In that sense, evaporating plants are a very important element in the technology of heating operations. Their function in preserving products, reducing storage space and improving transport costs is irreplaceable. Evaporation/thickening is considered to be an essential production process, without which it would not be possible to produce many items in the food, chemical and pharmaceutical industries.

Important elements in evaporation of a medium are its viscosity and heat sensitivity as well as the technological conditions required by a medium in order to retain its original properties in the product. Falling Film Evaporators

With falling film evaporating plants we thicken milk, whey, fruit juices and many other media in the food processing, pharmaceutical and chemical industries (acids, suspensions, emulsions). These plants are usually equipped with a steam ejector in one of the steps to achieve higher plant economy by reducing steam consumption during the evaporation process.

These plants have a great advantage over other types of plants in the viscosity range up to 180 cP. Their main feature is the short time of contact between the media and the heating surface, so that an excellent, high quality product without an unpleasant odor or taste is obtained.

Depending on the amount of raw material, falling film evaporating plants can be designed as a single-stage or a multi-stage plant. Managing the evaporation process at the plant is completely automatic. Raw material insertion is regulated by a flow meter at the beginning of the operation. The dry substance indicator controls the output of the solid product, so the density of the product can be determined as desired. The amount of steam at the inlet to the ejector and the sterilizer automatically regulates a pneumatic valve, thereby ensuring a uniform production process. The water inlet of the condenser is also regulated by a pneumatic control valve. The plants are equipped with a command distribution box, a PLC, an operating panel and an associated program that effortlessly manages the entire evaporation process.


Forced Circulation Evaporators

Forced circulation evaporating plants are named after the recirculation of the media that evaporates in the separator - evaporator system. Recirculation can be thermosiphonic (to the degree of media entry) or forced, by the use of circulation pumps (to the degree at which the medium is more viscous).

In most cases, these plants are used to evaporate media of increased viscosity (tomatoes are one common media that we threath with this type of evaporating plants). We classify these plants according to their number of degrees, so we have single-stage or multistage, with the possibility of completing evaporation with an ejector, thus achieving better plant economy in terms of steam consumption per unit of time.

We also classify them according to the direction of the motion of the media and the heating vapor, i.e. direct, counter-direct and combined.


Evaporating Plants Made Of Vacuum Cookers

Evaporating plants made of vacuum cookers are used to thicken viscous media and are used in the production of syrups, jams, marmalades, ajvar (similar to chutney) and other products.

The plants consist of one or more vacuum cookers with a stirrer, condenser, vacuum pump, water pump and platform. The entire system has been upgraded with the appropriate PLC and an implemented automatic management system.

Technical description of the process

  1. Required vakuum is achieved and maintained with the use of proper vacuum pump, equiped with a rotating water ring.
  2. The thickening of the medium is accomplished by the evaporation of water and the drainage of the wet steam into the water cooled semi-barometric condeser.
  3. The wet steam from the upper housing of the vacuum cooker is drained via a butterfly block valve into the counter-flow semi-barometric condenser, where it directly mixes with the circulating cooling water.
  4. Centrifugal pump draws the cooling water as well as liquified wet steam from the bottom of the semi-barometric condenser and forces the same into the cooling tower for cooling.
  5. Once cooled inside the tower, cooling water flows back to the water intermediate tank with use of the gravity.
  6. For drawing out of the cooked, preserved medium to the filling maschine, we use a screw pump.

Multistage Falling Film Evaporators With Aroma Recovery Unit

Multi-stage evaporating stations with a falling film and a built-in aroma trap are designed to simultaneously capture aroma from cloudy juices and concentrate clear juices . This design of the evaporator station with a built-in aroma trap saves on the consumption of steam per kilogram of evaporated water from the juices.

In such evaporating stations we evaporate the following fruit juices:

  • Apple

  • Citrus
  • Blueberry
  • Currant
  • Raspberry

Such evaporating stations are performed from 4 or 5 stages with the aroma trap positioned behind the 1st stage.

The end product of evaporation in such evaporating stations are high quality fruit concentrates and aromas that can later be used in the production of beverages.
